This is a good recipe to no waste food. You can use stale bread and make a typical Tuscan Soup. Remember, you need only Tuscan bread, without salt. The other kind of breads are not good for this recipe.

  1. Stale tuscan bread (absolutely without salt)
  2. Tomato puree 400g
  3. Half onion
  4. A rib of celery
  5. Salt
  6. Pepper
  7. Chili pepper to taste
  8. Stock cube for broth
  9. Olive oil
  10. Some cloves of garlic
  1. In a pot make the broth with stock cube (about half a liter, depending on how much stale bread you use) and keep warm.
  2. Put some olive oil in a pan and heat.
  3. Add the garlic cloves, minced onion and chopped celery.
  4. Add chili pepper to taste.
  5. Fry gently and add the chopped tomatoes.
  6. After a few minutes add the broth.
  7. Cook about 10 minutes, season with salt and pepper, then add the chopped stale bread.
  8. Stir often and cook another 10 minutes until you reach the consistency you prefer.
  9. This is a good single course, but in little quantity you can serve it as appetizer.
