Ingredients
- 400 g of flour
- 150 ml of lukewarm milk
- 5 yolks
- a teaspoon of salt
- 140g of sugar
- 2 teaspoons of honey
- 120g of butter
- 1 cube of fresh brewer's yeast
- 1 vanilla bean
- 150 g of raisin or minced chocolate
- 1 Plate for Panettone
1° step
- Make a ball of dough with 80g of flour and the brewer's yeast cube mixing all with a little of water not cold.
- Knead and let rise for about 2 hours.
- The dough have to double his volume
2° step
- Mix 220g of flour with half sugar, 3 yolks lightly beat, 100 ml pf lukewarm milk and melted half butter.
- Add all at the first dough made in step 1.
- Flour all and let rise at least 6 hours covered by wrap.
3° step
- Put half flour in a bowl, add 2 yolks lightly beat, salt, the vanilla seeds, all remaining butter, the raisin or minced chocolate.
- Knead all with the dough of step 2.
- Put all inside the plate for Panettone and grease the surface with melted butter, for don't dry out.
- Let rise for all night.
Cooking
- The morning after, cook at 180° for 50 minutes.
- Let cool turn upside down in a pot, helping with long wooden sticks.
- This serves not to deflate it.

- I have done all by my hand, without the dough machine. But it was crazy. If you have use it.
