Ingredients
- 1 kg durum wheat semolina flour
- 6 eggs
- Olive oil
- Few water
Instructions
- In a bowl, mix the flour with the eggs and a few tablespoons of olive oil.
- Transfer everything to the pastry board and work the dough until it becomes smooth and homogeneous. It will take at least half an hour.
- If it is too dry, wet your hands with water and continue kneading.
- Take the ball of dough and wrap it in plastic wrap.
- Let it rest for 30 minutes in a cool place.
- Roll out the dough on a pastry board.
- Cut the dough to many strips to obtain various types of pasta or to make tortellini and ravioli.
- Usually the fresh pasta can cook in 3/5 minutes.
