Ingredients
  1. 1 kg durum wheat semolina flour
  2. 6 eggs
  3. Olive oil
  4. Few water
Instructions
  1. In a bowl, mix the flour with the eggs and a few tablespoons of olive oil.
  2. Transfer everything to the pastry board and work the dough until it becomes smooth and homogeneous. It will take at least half an hour.
  3. If it is too dry, wet your hands with water and continue kneading.
  4. Take the ball of dough and wrap it in plastic wrap.
  5. Let it rest for 30 minutes in a cool place.
  6. Roll out the dough on a pastry board.
  7. Cut the dough to many strips to obtain various types of pasta or to make tortellini and ravioli.
  8. Usually the fresh pasta can cook in 3/5 minutes.
