Ingredients
  1. 7 zucchini
  2. half onion
  3. 200ml tomato puree
  4. 4 slices of bread
  5. 3 tablespoons of grated cheese
  6. bread crumbs
  7. salt
  8. pepper
  9. parsley
Instructions
  1. Boil the zucchini for 5 minutes.
  2. Pass them under water to cool them and cut them in two equal parts lengthwise.
  3. Dig the two parts of the pulp that you will collect in a bowl.
  4. Be careful not to break them.
  5. Put the zucchini dug in a baking pan and pass a drizzle of oil in the cavity.
  6. Chop the half onion and fry it in a little oil in a pan.
  7. Add the zucchini pulp.
  8. Add salt and pepper.
  9. After 5 minutes add the tomato and cheese, cook another 5 minutes.
  10. In the meantime mince the slices of pancarrè with the mixer.
  11. Add the mince to the filling and stir.
  12. With this mixture fill the zucchini.
  13. Sprinkle everything with breadcrumbs.
  14. Bake for 20/25 min at 180° degrees.
