Peppers stuffed with couscous

Wash and cut the 2 peppers in half. Remove the seeds and filaments leaving two halves intact. Put the half peppers in a pan with a glass of water. Cover and leave to cook for about fifteen minutes. Eggplant sauce

Wash and slice an eggplant, sprinkle the slices with a little salt to remove the bitterish. Mince the half onion and fry in a little oil, when it’s browned add the eggplant cut into cubes. Fry some minutes and then add salt and pepper.
