Ingredients
- 200g of rice
- 1 liter of milk
- 2 eggs
- 100g of white flour
- 50g of butter
- 2 tablespoons of rum (or brandy)
- 1 teaspoon of baking soda
- 1 orange
- 50g of sugar
- a pinch of salt
- oil for frying
Instructions
- Boil the milk with a pinch of salt, add the rice, and after a few minutes add the butter, sugar and grated orange rind.
- If you don't have a good orange (organic) you can squeeze an orange and add the juice at the end of cooking mixing well.
- Cook the rice until the milk will be absorbed completely.
- Turn off the heat and let cool for some hours.
- Add the two egg yolks, baking soda, flour, rum and stir vigorously.
- Whip the whites egg up and add to the rice and stir well.
- With the support of two spoons create some small balls of dough and begin to fry them in hot oil.
- Fritters should be able to float in the oil.
- Sugar the fritters with granulated sugar and serve.
