Ingredients
  1. 4 eggs
  2. 100 g of sugar
  3. 500 g of Mascarpone
  4. 300 g of Savoiardi biscuits
  5. 400/500 ml of cold coffee made by Moka
  6. unsweetened cocoa powder
Instructions
  1. Separate the yolks from the whites.
  2. Beat the egg yolks with the sugar, with the electric whisk.
  3. When the mixture is frothy, add the mascarpone and mix with again the electric whisk.
  4. Whisk the egg whites aside and add everything to the yolks.
  5. Take a baking dish and spread a layer of cream.
  6. One by one quickly soak the biscuits in the bitter coffee and make a layer of biscuits alternating with the cream.
  7. Finish with the cream and refrigerate for at least 3 hours.
  8. Before serving sprinkle with unsweetened cocoa passed through a sieve.
Notes
  1. I also add some drops of unsweetened chocolate which make it particularly good.
  2. You can also compose the dessert in single portion jars or cups if you prefer.
