Ingredients
- 320 g of short pasta
- 2 eggplants
- 2 peppers
- 1 onion
- 3 zucchini
- 300 g of cherry tomatoes
- oil
- salt
- pepper
Instructions
- Wash the vegetables and cut them into small pieces
- In a pan, fry the minced onion with a little oil.
- When it is a little browned, add the diced vegetables.
- Add salt and pepper to taste.
- Cook for about twenty minutes.
- When they are almost cooked, add the cherry tomatoes cut into 2 parts.
- Meanwhile, heat a pot of salted water to cook the pasta for the indicated time.
