Ingredients
  1. 320 g of short pasta
  2. 2 eggplants
  3. 2 peppers
  4. 1 onion
  5. 3 zucchini
  6. 300 g of cherry tomatoes
  7. oil
  8. salt
  9. pepper
Instructions
  1. Wash the vegetables and cut them into small pieces
  2. In a pan, fry the minced onion with a little oil.
  3. When it is a little browned, add the diced vegetables.
  4. Add salt and pepper to taste.
  5. Cook for about twenty minutes.
  6. When they are almost cooked, add the cherry tomatoes cut into 2 parts.
  7. Meanwhile, heat a pot of salted water to cook the pasta for the indicated time.
  8. Drain it "al dente" and sauté for a minute in the vegetable sauce.
  9. Then serve.
