Peppers stuffed with couscous

Ingredients
- 2 peppers
- 50 g of stoned black olives
- 80 gr of couscous
- 1 clove of garlic
- olive oil
- some broth
- salt
- pepper
Instructions
- Wash and cut the 2 peppers in half.
- Remove the seeds and filaments leaving two halves intact.
- Put the half peppers in a pan with a glass of water.
- Cover and leave to cook for about fifteen minutes.
- The peppers should soften, but not too much. If the water dries, add more.
- Take the other two half peppers and cut them into small cubes.
- In a pan brown a clove of garlic with a tablespoon of oil.
- Add the diced peppers and a little salt.
- Brown them for a couple of minutes, add a glass of hot water and cover.
- Cook for about fifteen minutes.
- Add the stoned black olives and leave to gain flavor for a couple of minutes.
- Add the couscous and a couple of ladles of boiling broth.
- Turn off the heat and let it rest for 5 minutes.
- Season with salt and pepper and stuff the peppers with the stuffing of couscous.
- Bake for about ten minutes and serve.
