Serves 6:
6 curls of butter and butter to grease the mold
2 tablespoons of bread crumbs
80 grams of grated cheese
120g of diced ham
2 eggs
1 mozzarella cheese
1kg of potatoes
Nutmeg powder
salt
pepper
1 smoked scamorza cheese 100gr
Wash and boil the potatoes in salted water. With a pressure cooker, put three glasses of water, salt and cook for 20 minutes from whistle. If you normally boil, boil forv 40 minutes. After cooking let them cool a bit, peel and cut into chunks. Meanwhile, pre heat the oven to 180 °. Pass the potato masher (I’ve used a fork). In a large bowl mix the potatoes with 2/3 of the grated cheese, eggs, salt, pepper and nutmeg (a big pinch). Mix the ingredients with force. Cut the mozzarella and the smoked scamorza cheese into cubes. Combine the mixture with the diced ham. Grease a baking dish and sprinkle with breadcrumbs. Pour in the mixture level and cover with the remaining grated cheese and butter. Bake the first 15 minutes at 180 °. Then turn up the oven at 200° for 15 minutes. Let it cool at least 15 minutes. Serve lukewarm.
