Ingredients
- 350g of spaghetti
- 150g of diced "Guanciale" or diced smoked bacon
- 1 egg per person
- salt
- pepper
- Pecorino cheese to taste
Instructions
- Put the salted water to boil and cook the pasta, that will cook in about 10 minutes.
- In the meantime, heat a little oil in a large pan and brown the Guanciale or bacon.
- Beat the eggs with a fork, adding salt and pepper.
- When the pasta is cooked, drain it and set aside a little cooking water.
- Pour the pasta into the pan, add the egg and a little cooking water (only if the egg thickens too much).
- Add Pecorino cheese on to taste.
- Serve immediately.
