Tortellini with raw ham

Ingredients
- 300 g of fresh pasta
- 250 g raw ham (not smoked)
- 50 g of mortadella
- 150 g of Parmesan reggiano
- 1 egg
- Pepper
- Salt
- Nutmeg
- Meat broth
Instructions
- Mince the ham and mortadella together with the mixer.
- Combine the mince in a bowl with the Parmesan and egg.
- Add salt, pepper and grated nutmeg to taste.
- Mix well and add a few ladles of broth, if necessary, until the dough is smooth and homogeneous, not too solid.
- Wrap the dough in cling film or place it in a container and place in the fridge.
- In the meantime, prepare the pastafollowing this recipe and roll it out with a rolling pin into a sheet thin.
- Make small squares of dough that you will fill with a teaspoon of mixture.
- Then fold the dough and close.
- When ready, cook in hot broth for at least 5 minutes and serve.
Notes
