Ingredients
  1. 300 g of fresh pasta
  2. 250 g raw ham (not smoked)
  3. 50 g of mortadella
  4. 150 g of Parmesan reggiano
  5. 1 egg
  6. Pepper
  7. Salt
  8. Nutmeg
  9. Meat broth
Instructions
  1. Mince the ham and mortadella together with the mixer.
  2. Combine the mince in a bowl with the Parmesan and egg.
  3. Add salt, pepper and grated nutmeg to taste.
  4. Mix well and add a few ladles of broth, if necessary, until the dough is smooth and homogeneous, not too solid.
  5. Wrap the dough in cling film or place it in a container and place in the fridge.
  6. In the meantime, prepare the pastafollowing this recipe and roll it out with a rolling pin into a sheet thin.
  7. Make small squares of dough that you will fill with a teaspoon of mixture.
  8. Then fold the dough and close.
  9. When ready, cook in hot broth for at least 5 minutes and serve.

  1. Do some tests, to take the measure. The first are always exaggerated, they are ugly but good!
