Ingredients
  1. 1 eggplant
  2. Tomato puree 400
  3. Half onion
  4. Olive oil
  5. Salt
  6. Pepper
Instructions
  1. Wash and slice an eggplant, sprinkle the slices with a little salt to remove the bitterish.
  2. Mince the half onion and fry in a little oil, when it's browned add the eggplant cut into cubes.
  3. Fry some minutes and then add salt and pepper.
  4. If necessary add a little water.
  5. Bake for about 10 minutes then add the tomato, other 15/20 minutes and the sauce is ready for to season preferably short pasta.
