Ingredients
  1. 1 onion
  2. 1 celery
  3. 2 carrots
  4. 1 yellow pepper
  5. 3 zucchini
  6. some cherry tomatoes
  7. basil
  8. salt
  9. chilli pepper
  10. olive oil
Instructions
  1. Cut the onion, celery and carrots and saute in a pan with the oil.
  2. Cut the eggplants into cubes without peeling them and add them to the mixture. After about 5 minutes add the peppers, cut into strips, diced zucchini and tomatoes.
  3. Add salt, pepper and a few leaves of basil.
  4. Let cook for about 15 minutes, until the vegetables are all tender.
