Ingredients
- 2 pepperoni
- 2 eggplants
- 1 onion
- 3 zucchini
- parsley to taste
- olive oil
- salt
- pepper
Instructions
- Clean and cut into small pieces the vegetables.
- In a pan fry in a few olive oil the minced onion and add the cut vegetables.
- Add salt and pepper to taste.
- Cook about 20 minutes. If the vegetables are too dry, put a glass of water in the pan.
- Add minced parsley at the end of cooking and serve.
