Ingredients
- 7 zucchini
- half onion
- 200ml tomato puree
- 4 slices of bread
- 3 tablespoons of grated cheese
- bread crumbs
- salt
- pepper
- parsley
Instructions
- Boil the zucchini for 5 minutes.
- Pass them under water to cool them and cut them in two equal parts lengthwise.
- Dig the two parts of the pulp that you will collect in a bowl.
- Be careful not to break them.
- Put the zucchini dug in a baking pan and pass a drizzle of oil in the cavity.
- Chop the half onion and fry it in a little oil in a pan.
- Add the zucchini pulp.
- Add salt and pepper.
- After 5 minutes add the tomato and cheese, cook another 5 minutes.
- In the meantime mince the slices of pancarrè with the mixer.
- Add the mince to the filling and stir.
- With this mixture fill the zucchini.
- Sprinkle everything with breadcrumbs.
- Bake for 20/25 min at 180° degrees.
