Melt the butter in a little pan, add the flour and brown for a few seconds. Then add gradually the hot beef broth. Season with nutmeg, adjust salt and pepper to taste.
Boil potatoes 15 minutes in a pressure cooker, peel and mash. Cut and clean the mushrooms that can be optional mixed or mushrooms (Porcini), frozen or ready to use.
Mince the garlic cloves and parsley. Fry in a few olive oil. Add the shrimps and let cook with a little salt and Chili pepper to taste for 10 minutes.
Peel the carrots and boil them in boiling water for 20 minutes (10 if you use the pressure cooker). Drain and mash in the mill. Put in a large bowl the mashed carrots, 2 egg yolks, 1 egg white, salt and pepper.
