Spaghetti carbonara

Serves 4:
350g of spaghetti
150g diced smoked bacon
1 egg per person
salt
pepper
pecorino cheese to taste

In a saucepan, boil the water. Cook the pasta, which will be ready in about 10 minutes. Meanwhile, in a large pan put a little oil to warm up. Sauté and brown the bacon. Beat the eggs with a fork, adding salt and pepper. When the pasta is cooked, drain and set aside a little of the cooking water. Pour in the pasta into the pan, add the egg and a little of the cooking water if the sauce thickens too much. Add the pecorino cheese to taste. Serve immediately.
